Director of Food – Mission Mars Bars Group
Salary: £85,000 - £115,000 per annum (dependent on experience and location) + up to 30% bonus
Who we are
Mission Mars is an award winning multi concept hospitality operator. We are looking for a Director of Food for our Bars division. The Bars division comprises of Albert’s Schloss (currently in Manchester, Birmingham, Liverpool, and London), Albert’s Schenke (Liverpool) and Albert Hall (Manchester), with a combined turnover of £40m including £8m in food revenue.
This is an exciting opportunity for a credible and experienced leader to play a pivotal role in developing our food operations, driving excellence in standards, developing a world class food offering for our guests, and leading and mentoring our talented Chef and kitchen teams.
Role Overview
This role is a national role and will require working during the day time, evening, and weekends, with occasional international travel for research trips and conferences.
As the Director of Food, you will be responsible for overseeing all aspects of our food service operations, ensuring the highest standards of quality, safety, and guest satisfaction. You will lead a team to develop innovative menus, manage budgets, implement training and development and career pathways, and implement efficient processes to enhance our food services.
What you’ll be doing
Strategic Leadership
- Develop and execute a strategic plan for food operations, aligning innovation with the company's goals and brand identity.
- Lead the food team in creating unique, appealing and on brand menus that reflect current trends and exceed guest expectations.
- Collaborate with senior leadership team to align food strategies with broader business objectives.
People and Culture
- Inspire and mentor a team of chefs and kitchen team members to foster a culture of excellence and consistency.
- Implement talent development programs to nurture future leaders and ensure robust succession planning.
- Lead recruitment efforts, ensuring that hiring strategies align with organisational goals and cultural values.
- Enhance Back of House (BOH) quality of life through targeted initiatives to improve team satisfaction and retention.
Financial and Operational Management
- Develop and manage budgets, ensuring optimal resource allocation to optimise profitability.
- Streamline operations to improve efficiency, implementing best practices across all sites.
- Establish strong, sustainable relationships with suppliers to secure quality ingredients and services.
Innovation and Development
- Lead the development and launch of new menus and concepts, ensuring they are both innovative and profitable.
- Stay ahead of industry trends through continuous research and participation in culinary events.
- Champion sustainability efforts within food operations, focusing on reducing waste and promoting ethical sourcing.
Who we need
- Minimum of 7 years of experience in food service management and in a leadership role.
- Proven track record of developing and implementing successful Menu Innovation and sustainability initiatives.
- Strong financial acumen with experience in budget management and cost control.
- Excellent communication, leadership, and interpersonal skills.
- In-depth knowledge of health and safety regulations and best practices in food service.
- Ability to thrive in a fast-paced, dynamic environment.
